Buying beef broth

Having just finished cooking 5 bowls of beef pho for breakfast, Ms. Bui Thi Quynh Phuong in Lang Ha (Dong Da, Hanoi) shared: "It only takes about 15 minutes to have a hot bowl of beef pho to eat at home".

Ms. Phuong shared that beef pho is her family's favorite dish. Usually, 3-4 times a week, the whole family goes to a familiar pho restaurant near their house for breakfast. Even on weekends, everyone goes to famous pho restaurants in Hanoi to enjoy it. Since the restaurants have closed to only sell take-out, she has ordered food but the shipping time is long, and the pho delivered to her home is not as delicious as eating at a restaurant.

"Many families can cook pho themselves, but cooking is not my forte. To have a pot of pho broth with the right flavor, the bone simmering process takes too much time," she said. Just when the whole family was craving, she saw that beef pho broth was being sold on the "online market" so she bought it to try cooking.

The price of a package of pho broth is only 45,000 VND, put it in a pot, add water and boil it. Fresh pho noodles are sold everywhere, so she only needs to prepare herbs and beef to have a delicious bowl of pho, she said.

Pho broth is quite convenient, but Ms. Phuong commented that compared to the broth she cooked herself or ate directly at reputable traditional pho restaurants, it is not as fresh, sweet and full of spices.

After ordering pho broth a few times to cook for her family, Ms. Le Khanh in Tong Dan (Hoan Kiem, Hanoi) felt that to get the standard pho flavor like eating at a restaurant, it is not possible, but in return, it is quite convenient and quick to prepare. In the morning, she only needs 15 minutes in the kitchen to finish a few bowls of pho.

However, Ms. Khanh is also concerned, the juice is packaged in unlabeled plastic bags, without clear ingredients, the seller only said to keep it in the freezer for 2 months. Therefore, she is still a bit hesitant about its quality.

Refusing to reduce customers due to overload.

Ms. Tran Thuy Linh - a wholesaler of beef pho broth in Khuong Dinh (Thanh Xuan, Hanoi) - said that she has only been selling pho broth for about 2 months now. Since the outbreak of the epidemic, the number of customers buying pho to take away has decreased significantly.

To improve the situation, she sells this handmade beef pho broth in the hope of increasing revenue during the epidemic.

At first, the amount of packaged beef pho broth sold was quite modest, because many people did not know about it. Recently, she was quite surprised because the number of buyers increased rapidly, the goods cooked every day were sold out that day.

According to Ms. Linh, this broth is very elaborately simmered from beef bones, taking 7 hours to complete. She only puts the broth in bags, stores it in a cooler and sends it to customers. Every other day, she cooks a pot of about 100 liters of broth (can make 500-600 packs). She cooks as customers order, so there is almost no stock available, and she has to order 1 day in advance to prepare in time.

“Currently, I sell retail for 45,000 VND/pack, shipping from 2 packs or more. I also wholesale from 25 packs to mini supermarkets and wholesalers at 38,000 VND/pack. Each time they take 50-100 packs,” she brags.

Many women who try it for the first time buy 2 packs, while those who are used to it and find it delicious buy 5 packs at once to keep in the refrigerator to eat gradually. Therefore, she sells very well on this occasion, sometimes having to turn away some customers and make appointments for the next day.

Similarly, Ms. Thu Huong - an online food seller in Phuong Mai (Dong Da, Hanoi) - said that this is the first year she has sold pho broth, which is very convenient and suitable for those who are addicted to this traditional dish, especially in the current epidemic situation.

Ms. Huong advertised that to make the broth, she had to simmer bones with spices such as star anise, cinnamon, cardamom, etc., which took a lot of time. Mix one packet of broth with 2 liters of boiling water, then add pho noodles, beef, and herbs to get 5-6 bowls, enough for the whole family to eat comfortably at a fairly cheap price. This type of broth can be kept in the refrigerator for 2 months and in the freezer for 6 months, so it is chosen by many housewives.

Currently, Ms. Huong sells out 300-400 packages of beef pho broth every day. Because the epidemic is not known when it will end, she is determined to do business in this product long-term.

“In the future, I might sell a combo with pho, vermicelli, and herbs so that customers can just reheat and eat without having to buy more,” she said.
